"I want a restaurant where I can casually eat natural foods."

She started to reevaluate her diet due to her child's allergies,
I have adopted natural foods.
However, there are still very few restaurants serving natural foods in the Izunokuni area.
The number is even smaller when it comes to places where you can go easily.
It doesn't matter if you're a small child or an elderly person, anyone can come and eat here.
I thought it would be nice to have a place like a community restaurant.

"I want to make use of ingredients that would otherwise be wasted."

Vegetables and fruits that are discarded or left unharvested to rot.
Damage caused by wild boars and deer, and wild plants that go unnoticed...
While I felt the natural abundance of Izunokuni City, I also felt that there was a lot of waste.
I was personally processing the gifts I received into jams and other things,
I realized there were limitations to what one person could do, and I began to think that if I worked on a larger scale, I could make the most of more ingredients.

"I want to promote natural and organic farming and natural foods."

There are many producers in the city with wonderful ideas.
However, I have heard that it is difficult to get into general distribution, and there are limitations to doing everything from production to sales. I would like to create a place and system to spread the word to many customers.

Also, there are very few stores that sell natural foods in the eastern region, so we hope that by gradually starting to sell these products, we can provide an opportunity for people to learn about natural foods.

It was about a year ago that I started thinking specifically about creating a place like Issai.
I have been slowly exploring different forms, taking time out of my daily life to make this happen.

I consulted with a variety of people.
It's not all positive words.
Simply setting an ideal does not mean you can continue doing it.
We repeatedly questioned whether we could do it, and we were disheartened...
Still, I feel like I want to do it now and that it is needed.

I decided to move forward, trusting in my feeling that there was a possibility.


"Issai" will be something like a big project.

Because it is a big thing, I decided to do it now, considering my age and physical strength.

I decided to give it a try.


"Issai Issai" is not a store run by just one person.
People who share the same philosophy gather together, run the business, and provide employment for many people.

We hope this will become a place where you can gather and interact with each other.
We will pursue the necessary expenses to continue our business and profits for our employees,

It is not a business run for personal profit.

There is no target customer base at all.
All generations, all people

However, we want this to be a restaurant where you can enjoy natural food.

Utilizing wasteful ingredients, introducing and distributing high-quality ingredients,

Food education, etc. Everything about food

I want this to be a place where we can share our ideas.

With this in mind, we decided to use the familiar hiragana character "issai."

It also contains the word "ichisai" (one dish), making it a perfect fit for the restaurant, which also functions as a dining hall.
